This month I hosted another fun Chick Chat in my home and the theme was “Summertime Desserts”. Each time we have Chick Chat we always start with the desserts first and then everyone gathers in my living room and listens to one woman in the group who shares her story. This month my friend Jenny shared her story of Gods faithfulness in her life and her special needs son. It was such a beautiful and hopeful testimony. After Jenny spoke, we played a get to know you game and then concluded with a second round of desserts as we mingle and chat more. I try and make plenty for people to take some home with them and with almost 40 women in attendance I knew I had to make A LOT of desserts and I wanted them to be fun and unique. My focus was on classic summer treats but with an over the top twist.
At the center of the table were the 3 main cakes. In the middle was the S’mores Cake which was a chocolate cake layered with marshmallow cream, frosted with chocolate frosting and decorated with graham crackers and chocolate covered marshmallows.
Next was an Orange Dreamsicle cake which was an orange cake layered between orange marshmallow cream and frosted with orange cream cheese frosting. I topped the cake with homemade popsicles I made out of orange chocolate using a mold I purchased from Orson Gygi.
Next I wanted to create a twist on the traditional Strawberry Shortcake crunch popsicle. This is a strawberry cake layered with cream cheese frosting and coated in strawberry crunch crumbles. I made the popsicles using the same method. I used pink chocolate and coated the popsicles in the crumbles.
With all of the main cakes I also made corresponding cupcakes that were the same flavors.
One thing I love about Summer is all of the fun summer pies. For Chick Chat I chose to go with Cherry, Pina Colada and Key lime pie!
Another fun Chick Chat is in the books! I love to make each one special for the women that come to my house. Its fun to use the season as the theme and I cant wait for the next one which will be Fall desserts!
