Upon moving to Utah I was quickly informed about “Pioneer Day”. Its arguably bigger than the 4th of July here in Utah. Pioneer day is always on July 24th and it celebrates the entry of Brigham Young and the first group of Mormon Pioneers into Utah’s Salt Lake Valley. Its always a big celebration with parades, fireworks, food and pie. In fact some call it PIEoneer day (Or even PIEandBEER day) So to go along with the theme of pies I didn’t just want to make actual pies themselves but instead Pie flavored cakes. Cara and I teamed up with Holly Jolley to create a fun and festive PIEoneer day table scape.
When I think of summer pies I typically think of Cherry and Blueberry pies. I wanted to come up with something unique and yet true to what those traditional pies typically are. The first “Pie Cake” I made was a Blueberry Crumble. Its a cinnamon blueberry cake filled with alternating layers of blueberry filling and brown sugar crumb topping all wrapped in a cinnamon cream cheese frosting.
Next I made a Cherry Pie cake. Its a vanilla almond cake layered with cherry pie filling and frosted with cinnamon cream cheese frosting in a basket weave design. Its topped with more cherry filling and a lattice pie crust topper. I really wanted the top to be the star of this cake but I was unsure how it was going to work. I tried using fondant for the lattice design but it wasn’t as natural as I needed it to be so I made a lattice weave out of actual pie crust and baked it on top of the cake pan turned upside down so it would be the same size as the cake and it turned out perfectly.
The last cake I made was a combination of both cakes. Its a vanilla cake with alternating layers of cherry and blueberry filling and topped with mini cherry and blueberry pies as well as the brown sugar crumble topping.
Trying to embody the pioneer spirit I ventured forth into uncharted territory, refusing to be forced into a choice between cake and pie. All you need is a little courage and dash of creativity and a splash of flare and you too can Live Beautahfully wherever you call home.
